Lesson 1 — Heat vs Flavour

Heat is a sensation. Flavour is an experience. Most Caribbean blends lead with flavour first — warmth builds naturally. Tropical Infusion is medium heat, maximum flavour. You taste the spice before you feel it.

Lesson 2 — When to Add Spices

Early: Add to oil at the start to bloom the spice and build depth. Mid-cook: Layer in for complexity as proteins or veg cook through. Finish: A pinch at the end lifts the whole dish.

Lesson 3 — Dry Rub vs Marinade vs Wet Rub

Dry Rub: Spice on the surface — best for grilling, creates a crust. Marinade: Spice + oil + acid + liquid. Penetrates deeper. Min 30 mins. Wet Rub: Spice blended with oil or yoghurt into a paste — great for chicken thighs and lamb.

Lesson 4 — Toasting Spices

Dry-toast whole spices 60–90 seconds over medium heat until fragrant. Never walk away — they burn fast. Unlocks volatile oils and deepens flavour. Use in rice, sauces, and rubs.

Lesson 5 — Building a Caribbean Base

Every great Caribbean dish starts the same way: onion → garlic → thyme → pimento. Soften onion in oil, add garlic until golden, then thyme and pimento. This is your flavour foundation.

Tropical Infusion Chicken Bites

  1. Cut chicken thighs into chunks. Coat with 2 tsp Tropical Infusion, 1 tbsp oil, juice of ½ lime.
  2. Marinate 30 mins minimum (overnight is better).
  3. Pan-fry on high heat 4–5 mins each side until golden and cooked through.
  4. Finish with a squeeze of lime. Serve with rice or flatbread.

Caribbean Butter Salmon

  1. Season salmon fillets with 1½ tsp Tropical Infusion and a pinch of black pepper.
  2. Melt butter in a pan over medium-high heat. Add salmon skin-side down.
  3. Cook 4 mins, flip, add a knob of butter and baste for 2 mins.
  4. Rest 1 min. Serve with coconut rice and lime wedges.

Tropical Veg Tray Bake

  1. Chop sweet potato, peppers, cauliflower, and aubergine into chunks.
  2. Toss with 2 tbsp oil and 2 tsp Tropical Infusion. Spread on a tray.
  3. Roast at 200°C for 30–35 mins, turning halfway.
  4. Finish with fresh coriander and a drizzle of honey.

Island Herb Rice (Tropical Infusion Twist)

  1. Fry ½ onion and 2 garlic cloves in oil until soft. Add 1 tsp Tropical Infusion and stir 30 seconds.
  2. Add 1 cup basmati rice, stir to coat. Pour in 400ml coconut milk + 200ml water.
  3. Bring to a boil, reduce heat, cover and cook 12 mins.
  4. Fluff with a fork. Finish with fresh thyme and lime zest.

How much seasoning should I use?

Start with 1 tsp per 500g of protein or veg. Taste, then adjust. Our blends are concentrated — a little goes a long way. Build up rather than overdo it.

Can I use these blends on fish?

Absolutely. Tropical Infusion and Island Citrus Herb are both excellent on fish. Use a lighter hand — 1 tsp per fillet — and don't over-marinate. 15–20 minutes is enough for most fish.

How long should I marinate?

Fish: 15–20 minutes. Chicken: 30 mins minimum, overnight for best results. Lamb and beef: 2–4 hours, or overnight. Veg: 20–30 minutes is plenty.

Are your blends high in salt?

No. All Tropical Infusion blends are 100% salt-free. You control the salt in your cooking. This means better flavour control and a healthier result every time.

Are the blends vegan, halal-friendly, and gluten-free?

Yes to all three. Our blends contain no animal products, no gluten-containing ingredients, and are suitable for halal diets. Always check the label for the most current allergen information.
